Lemon Curd Recipe by Chef Emelia Jackson
Lemon curd is a rich and versatile spread or dessert topping that goes great with meringue pies, scones, cupcakes, muffins, and of course, Emelia Jackson’s famous cookie cake!
3 large eggs
150g caster sugar
80ml lemon juice (juice of 2-3 lemons)
55g unsalted butter
Zest of 1 lemon
Whisk together the eggs, caster sugar, lemon juice, and zest. Transfer into a sauce pan and stir over low heat until the mixture is thick.
Set aside to cool.
Once warm to the touch, whisk in the butter and transfer into the fridge. Best refrigerated overnight.
